Be Wise Ranch: Swiss Chard Frittata

Ingredients

  • 6 eggs, beaten
  • 1/2 cup grated parmesan
  • 1/2 teaspoon freshly ground black pepper
  • 1 pinch sea salt
  • 1/4 cup olive oil
  • 1 bunch of swiss chard
  • 1 yellow onion medium, diced
  • 1/2 cup basil, chopped

Preparation

In a medium size bowl, using a fork, whisk together eggs, parmesan, pepper and salt and set aside.  Wash chard thoroughly and cut into 1" strips. 

Heat 12" non-stick, oven-safe pan on medium high heat and add olive oil.  Pour in onions and saute until translucent.  Mix in swiss chard and saute until wilted.  After the chard is sauteed, pour egg mixture into pan and stir with rubber spatula.  Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle basil.

Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.  Sprinkle additional basil on top and enjoy!
