Artichoke and Heirloom Tomato Bruschetta

Ingredients

  •  6 Heirloom Tomatoes, seeded and diced
  • 1 can artichokes in water, drained and chopped
  • 1/2 jar capers, drained
  • 2 cloves garlic, mashed
  • 1/8-1/4 c chiffonade basil
  • Extra Virgin Olive Oil, to taste
  • Salt and Pepper, to taste

    Optional: Goat Cheese for toastettes


Preparation

Chop and add all ingredients listed above in a large bowl. Mix well and chill for at least 1 hour for the best, fullest flavor and so that all the ingredients marry. Serve.

Serving suggestions:

Slice fresh baguette and place on baking sheet. Drizzle with Extra Virgin Olive Oil and a sprinkle of salt and pepper and bake until slightly toasted in oven, approximately 10 min. Let toasts cool.

Spread fresh goat cheese on top of each toastette, top with bruschetta and a final drizzle of olive oil.
